Preparing the Crispy Chicken Tenders

Prepare Chicken
Cut the chicken breast into strips, about 1 inch wide.

Set Up Breading Stations
Set up three bowls: one with flour seasoned with salt, pepper, paprika, and garlic powder; one with beaten eggs; and one with panko breadcrumbs.

Bread the Chicken
Dredge each chicken strip in flour, then dip it into the egg, and finally coat it with panko breadcrumbs. Ensure the chicken is fully covered.

Fry the Chicken
In a large skillet, heat vegetable oil over medium heat. Once hot, add the breaded chicken tenders in batches, frying until golden brown and cooked through, about 4-5 minutes per side.

Drain and Keep Warm
Remove the cooked chicken tenders and place them on a paper towel-lined plate to drain excess oil. Keep warm in a low oven if needed.
Assembling the Salad

Prepare Salad Ingredients
Wash and dry the mixed greens. Slice the cherry tomatoes in half, thinly slice the red onion, and chop the cucumber.

Make Croutons
Cube the multi-grain bread into small pieces and toss with olive oil, salt, and pepper. Spread on a baking sheet and bake at 375°F (190°C) for 10-15 minutes until crispy.

Mix Salad
In a large bowl, combine the mixed greens, cheddar cheese, jack cheese, cherry tomatoes, red onion, and cucumber. Toss gently.

Divide the salad mixture onto plates and top with the crispy chicken tenders and multi-grain croutons.
