Grill the Chicken
Preheat your grill to medium-high heat. Rub the chicken breasts with olive oil and season with mesquite seasoning. Place the chicken on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for 5 minutes before slicing.

Cook the Bacon
In a skillet, cook the hickory smoked bacon over medium heat until crispy. Drain on paper towels and chop into small pieces.

Prepare the Wraps
Lay out the herb wraps on a clean surface. Begin by layering mixed greens evenly on each wrap, followed by sliced grilled chicken, diced tomatoes, crispy bacon, and a mix of cheddar and jack cheeses.

Wrap It Up
Fold the sides of the wrap inward and then roll from the bottom up to secure the filling. Repeat for the remaining wraps.

Make the Dressing
In a bowl, combine sour cream, mayonnaise, finely chopped fresh herbs, garlic powder, lemon juice, salt, and pepper. Mix well until all ingredients are fully integrated. Adjust seasoning to taste.
