Prepare the Chicken
If not already roasted, season the chicken breasts with salt and pepper, then roast in the oven at 375°F (190°C) for about 25-30 minutes or until fully cooked. Let cool, then slice.

Prepare the Jicama
Peel the jicama and cut it into thin matchsticks or cubes.

Prepare the Berries
Wash the strawberries and blueberries. Slice the strawberries into halves or quarters.
Making the Dressing

Combine Ingredients
In a small bowl, whisk together the olive oil, apple cider vinegar, honey, poppy seeds, salt, and black pepper until well combined.
Assembling the Salad

Combine the Salad Ingredients
In a large bowl, combine the mixed greens, sliced roasted chicken, jicama, crispy bacon (crumble it), strawberries, and blueberries.

Drizzle the poppy seed dressing over the salad and toss gently to combine. Adjust seasoning with salt and pepper to taste.
