Method
Prepare Salad Base
- 1
Chop Romaine
Wash the Romaine lettuce thoroughly under cold water. Remove the outer leaves and chop the remaining leaves into bite-sized pieces.
- 2
Combine Ingredients
In a large salad bowl, add the chopped Romaine lettuce and sprinkle the Multi-Grain Croutons over the top.
Make Caesar Dressing
- 3
Blend Dressing Ingredients
In a blender or food processor, combine the mayonnaise, Parmesan cheese, lemon juice, minced garlic, Worcestershire sauce, black pepper, and salt. Blend until smooth and creamy.
- 4
Adjust Seasoning
Taste the dressing and adjust the seasoning by adding more salt or black pepper if desired.
Cook Chicken
- 5
Prepare Chicken
Rub the chicken breasts with olive oil and sprinkle mesquite seasoning evenly on both sides.
- 6
Grill Chicken
Preheat a grill or grill pan over medium heat. Cook the chicken breasts for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
- 7
Slice Chicken
Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing it into strips.
Assemble Salad
- 8
Dress the Salad
Drizzle the Caesar dressing over the Romaine and croutons in the salad bowl. Toss gently to combine, ensuring the lettuce is well-coated.
- 9
Top with Chicken
Place the sliced grilled chicken on top of the dressed salad. Serve immediately.
