Preparing the Shrimp

Coat the Shrimp
In a large bowl, combine the flour, cornstarch, salt, and black pepper. In another bowl, beat the eggs. Dip each shrimp into the egg mixture, then coat with the flour mixture.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Fry the coated shrimp in batches, making sure not to overcrowd the pan. Cook for 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.
Making the Spicy Thai Chili Garlic Sauce

Mix the Sauce Ingredients
In a saucepan over medium heat, combine the Thai chili sauce, minced garlic, soy sauce, honey, lime juice, sesame oil, and chili flakes. Stir well and let the mixture simmer for about 5 minutes.

Combine with Shrimp
Once the sauce has thickened slightly, add the fried shrimp to the saucepan. Toss the shrimp in the sauce until evenly coated.
Serving

Garnish and Serve
Transfer the shrimp to a serving platter, garnish with sliced green onions, and serve immediately.
