    Start by trimming any excess fat from the beef tenderloin. Cut it into medallions, approximately 1 to 1.5 inches thick.

    In a small bowl, mix together the salt and black pepper. Rub this mixture evenly over each beef medallion to ensure they are well seasoned.

    Sear the Medallions

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the beef medallions to the pan, making sure not to overcrowd them. Sear for about 3-4 minutes on each side for medium-rare, or until they reach your desired doneness.
