Main Dish: Herb-Crusted Roast Chicken

Prepare the Chicken
Preheat your oven to 425°F (220°C). Pat the chicken dry with paper towels and place it in a roasting pan.

Make the Herb Mixture
In a small bowl, mix together the olive oil, rosemary, thyme, garlic, lemon zest, lemon juice, salt, and black pepper.

Season the Chicken
Rub the herb mixture all over the chicken, making sure to get under the skin for maximum flavor.

Roast the Chicken
Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).

Rest and Serve
Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
Side Dish: Garlic Mashed Potatoes

Drain and Mash
Drain the potatoes and return them to the pot. Add the butter, milk, roasted garlic, salt, and black pepper.

Mash the Potatoes
Using a potato masher, mash the ingredients together until smooth and creamy. Adjust seasoning as needed.

Mix the Batter
In a large bowl, whisk together the eggs and sugar until thick. Stir in the melted chocolate mixture, flour, vanilla extract, and salt until just combined.

Pour the batter into the prepared ramekins and bake for 12-14 minutes, until the edges are firm but the center is soft.

Let cool for 1 minute, then invert onto plates and serve immediately with ice cream or whipped cream.
