Method

Main Dish: Herb-Crusted Roast Chicken

    Prepare the Chicken

    Preheat your oven to 425°F (220°C). Pat the chicken dry with paper towels and place it in a roasting pan.

    Make the Herb Mixture

    In a small bowl, mix together the olive oil, rosemary, thyme, garlic, lemon zest, lemon juice, salt, and black pepper.

    Season the Chicken

    Rub the herb mixture all over the chicken, making sure to get under the skin for maximum flavor.

    Roast the Chicken

    Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).

    Rest and Serve

    Remove the chicken from the oven and let it rest for 10-15 minutes before carving.

Side Dish: Garlic Mashed Potatoes

    In a large pot, add the peeled and cubed potatoes and cover them with water. Bring to a boil and cook until tender, about 15-20 minutes.

    In a microwave-safe bowl, combine the chopped dark chocolate and butter. Microwave in 30-second intervals until melted and smooth.

    In a large bowl, whisk together the eggs and sugar until thick. Stir in the melted chocolate mixture, flour, vanilla extract, and salt until just combined.
