Burger Patty Preparation

    Make the Patty Mixture

    In a large bowl, combine the ground beef, salt, black pepper, garlic powder, and onion powder. Mix until well combined, but do not overwork the meat.

    Form the Patties

    Divide the mixture into two equal portions and shape them into burger patties, about 3/4 inch thick. Make a slight indentation in the center of each patty to prevent them from puffing up while cooking.

Grilling

    Preheat the Grill

    Preheat your mesquite grill to medium-high heat, ensuring it is well ventilated.

    Grill the Patties

    Place the patties on the grill and cook for about 4-5 minutes on one side. Flip the patties and place a slice of cheddar cheese on each patty. Grill for an additional 4-5 minutes, or until the cheese is melted and the patties are cooked to your desired doneness.

Assembling the Burger

    Prepare the Buns

    While the burgers are grilling, slice the brioche buns in half and toast them lightly on the grill for 1-2 minutes until golden brown.

    Spread mayonnaise on the bottom half of each toasted bun. Layer with lettuce leaves, followed by the grilled burger patty with melted cheddar, slices of tomato, onion, and pickles. Top with the other half of the bun.
