Method

Prepare Oysters and Shrimp

    Oysters

    Carefully shuck the oysters using an oyster knife. Place them on a bed of ice to keep them fresh.

    Shrimp Cocktail

    Boil the shrimp in salted water for 2-3 minutes until pink and opaque. Drain and cool in an ice bath. Serve chilled.

Cook Mussels

    Mussels Preparation

    In a large pot, heat a tablespoon of olive oil over medium heat. Add minced garlic and shallots, sautéing until fragrant (about 1 minute).

    Add Wine and Mussels

    Pour in the white wine and bring to a simmer. Add the cleaned mussels, cover the pot, and steam for 5-7 minutes until the mussels have opened. Discard any that remain closed.

    Finish with Parsley

    Stir in chopped parsley, salt, and black pepper to taste before serving.

Prepare Cocktail Sauce

    Mix Ingredients

    In a bowl, combine ketchup, horseradish, lemon juice, and hot sauce. Mix well and adjust seasoning to taste.

Prepare Tuna Tartare

    Combine Ingredients

    In a bowl, gently mix diced tuna, avocado, soy sauce, sesame oil, sliced green onions, and sesame seeds. Serve immediately.
