Cooking the Pasta

Boil Water

In a large pot, bring salted water to a rolling boil.

Cook Orecchiette

Add the orecchiette pasta to the boiling water and cook according to package instructions until al dente, usually about 10-12 minutes.

Reserve Pasta Water

Before draining, reserve about 1 cup of pasta water. Then drain the pasta in a colander.

Making the Sauce

Zest and Juice Meyer Lemon

While the pasta is cooking, zest the Meyer lemon and then cut it in half and juice it, making sure to remove any seeds.

Combine Ingredients

In a large skillet over medium heat, add the olive oil, Meyer lemon juice, and zest. Stir to combine and bring to a gentle simmer.

Add Seasoning

Add the cracked black pepper to the skillet and stir well. Let it cook for about 2 minutes to allow the flavors to meld.

Combine Pasta and Sauce

Add the drained orecchiette to the skillet. Toss to coat the pasta in the sauce, adding reserved pasta water a little at a time until you achieve your desired consistency.

Finish with Parmesan and Parsley

Remove from heat and stir in the grated parmesan cheese and chopped fresh parsley until well combined.

Plate the Dish

Serve the orecchiette warm, garnished with extra cracked black pepper and additional parmesan if desired.
