Method

Preparing the Fries

1

Cut the Potatoes

Wash and peel the russet potatoes. Cut them into thick fry shapes, about 1/4 inch thick.

2

Soak the Potatoes

Place the cut fries in a large bowl of water and let them soak for at least 30 minutes. This helps remove excess starch.

3

Dry the Potatoes

After soaking, drain the potatoes and pat them dry with paper towels to remove as much moisture as possible.

4

Fry the Potatoes

Heat the vegetable oil in a deep fryer or a large pot to 350°F (175°C). Carefully add the fries in batches, frying until they are golden brown and crispy, about 5-7 minutes per batch.

5

Drain and Season

Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt immediately.

Preparing the Toppings

6

Combine Topping Ingredients

In a mixing bowl, combine the crumbled feta cheese, chopped Kalamata olives, fresh oregano, and halved cherry tomatoes. Mix gently to combine.

7

Make the Yogurt Sauce

In a small bowl, mix together the Greek yogurt, lemon juice, minced garlic, and black pepper to taste. Adjust seasoning as needed.

Assembly

8

Plate the Fries

On a serving platter, arrange the hot fries in a single layer.

9

Top with Ingredients

Spoon the feta and olive mixture over the fries, followed by generous dollops of the yogurt sauce.

10

Serve Immediately

Serve the Greek French fries hot, garnished with extra oregano if desired.
