    Prepare the Brisket

    Trim excess fat from the brisket, leaving about a 1/4 inch layer. Mix salt, black pepper, garlic powder, onion powder, and smoked paprika in a bowl. Rub the seasoning mixture all over the brisket.

    Smoke the Brisket

    Preheat your smoker to 225°F (107°C). Soak wood chips in water for about 30 minutes, then drain. Place the brisket in the smoker and add the soaked wood chips. Smoke for approximately 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C).

    Prepare the BBQ Sauce

    In a medium saucepan, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, black pepper, and liquid smoke. Simmer over medium heat for about 20 minutes, stirring occasionally until thickened.

    Slice and Serve

    Once the brisket is done, remove it from the smoker and let it rest for 30 minutes. Slice thinly against the grain and serve topped with homemade BBQ sauce.
