    Prepare the Roux

    In a large pot, heat olive oil over medium heat. Stir in flour and cook, stirring constantly until the roux turns a deep brown color, about 15-20 minutes.

    Sauté Vegetables

    Add diced onions, green bell pepper, celery, and garlic to the roux. Cook until the vegetables are soft, about 5-7 minutes.

    Add Sausage and Spices

    Stir in the sliced Andouille sausage, Cajun seasoning, bay leaves, salt, and black pepper. Cook for another 5 minutes.

    Add Liquids

    Pour in the chicken broth and add the diced tomatoes with green chilies. Bring the mixture to a boil, then reduce heat and simmer for 30 minutes.

    Add Seafood

    Stir in the shrimp, crab meat, and oysters. Continue to simmer for an additional 10-15 minutes, until the seafood is cooked through.

    Serve

    Remove bay leaves and serve gumbo over cooked rice. Garnish with sliced green onions and parsley.
