    Prepare the Ingredients

    Rinse the red beans and soak them in water overnight. Chop the onion, green bell pepper, celery, and garlic.

    Cook the Aromatics

    In a large pot or Dutch oven, heat a little oil over medium heat. Add the chopped onion, bell pepper, and celery (the 'holy trinity') and sauté until softened, about 5 minutes. Add the garlic and cook for another minute.

    Add the Meats

    Slice the andouille sausage and tasso ham. Add them to the pot along with the ham hock. Cook for about 5 minutes until the meats are browned.

    Combine Everything

    Stir in the soaked red beans, bay leaves, thyme, cayenne pepper, black pepper, salt, and the water or chicken broth. Bring to a boil.

    Simmer

    Reduce heat to low, cover, and let it simmer for 1.5 to 2 hours, stirring occasionally. If the mixture becomes too thick, add more water or broth.

    Finish and Serve

    Once the beans are tender and creamy, remove the bay leaves and ham hock. Shred any meat from the ham hock and return it to the pot. Adjust seasoning to taste. Serve over cooked white rice.
