Rinse the long-grain white rice under cold water until the water runs clear. In a medium pot, bring 2 cups of chicken broth to a boil. Add the rinsed rice, reduce heat to low, cover, and simmer for about 15-20 minutes or until rice is tender and liquid is absorbed. Once done, fluff the rice with a fork and set aside.
