Add Vegetables
Once the roux is ready, add the diced onion, bell pepper, and celery. Cook for about 5 minutes until the vegetables are tender.

Add Broth and Seasonings
Pour in the chicken broth and add the tomato paste, Cajun seasoning, salt, and black pepper. Stir well to combine.

Simmer
Bring the mixture to a simmer, then reduce heat to low. Cover and cook for about 15-20 minutes, allowing the flavors to meld.

Serve the crawfish étouffée over cooked rice and garnish with sliced green onions.
