    Prepare the Pig

    Rinse the whole pig under cold water and pat dry with paper towels. Rub the entire pig with olive oil, ensuring to cover all areas.

    Season the Pig

    In a bowl, mix together minced garlic, chopped thyme, paprika, salt, and black pepper. Rub this mixture generously over the entire pig, including inside the cavity.

    Roast the Pig

    Preheat your oven or rotisserie to 250°F (120°C). Place the pig on a roasting rack and cook for approximately 8-10 hours, or until the internal temperature reaches 190°F (88°C). Baste with juices every hour.

    Prepare the Salsa

    While the pig is roasting, combine diced pineapple, red bell pepper, red onion, cilantro, and lime juice in a large bowl. Mix well and season with salt to taste. Let it sit for flavors to meld.

    Serve

    Once the pig is fully cooked and the skin is crispy, remove from the oven and let it rest for at least 30 minutes. Carve the meat and serve with the pineapple pepper salsa on the side.
