In a large mixing bowl, combine the boudin sausage, cooked rice, green onions, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix until well combined.

Add the eggs to the mixture and mix until incorporated. Using your hands, shape the mixture into balls about the size of a golf ball. Roll each ball in breadcrumbs until fully coated.

In a large pot or deep fryer, heat the oil to 350°F (175°C).
