Cook the Pasta
Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Cook the Pancetta
In a large skillet over medium heat, add the diced pancetta. Cook until crispy, then remove from the skillet and set aside, leaving the drippings in the pan.

Add the Cheeses
Reduce heat to low and stir in the asiago, fontina, havarti, and pecorino romano cheeses until melted and creamy. Season with salt and black pepper to taste.

Combine Pasta and Sauce
Add the cooked macaroni and crispy pancetta to the cheese sauce. Stir well to combine, and then drizzle in the white truffle oil, mixing thoroughly.

Bake (Optional)
If desired, transfer the mac and cheese to a greased baking dish, sprinkle with breadcrumbs, and bake in a preheated oven at 350°F (175°C) for 20 minutes until bubbly and golden on top.
