1. Prepare the Asparagus
Preheat your oven to 400°F (200°C). Place the trimmed asparagus on a baking sheet, drizzle with olive oil, and sprinkle with salt and black pepper. Roast in the oven for 10-12 minutes until tender.
2. Cook the Fish
In a large skillet over medium heat, melt 1 tablespoon of butter. Season the fish fillets with salt and black pepper. Add the fish to the skillet and cook for 3-4 minutes on each side until golden brown and cooked through. Remove the fish from the skillet and set aside.
3. Make the Sauce
In the same skillet, melt the remaining butter. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender. Stir in the lemon juice and capers, cooking for another 2 minutes to combine the flavors.
4. Combine and Serve
Return the cooked fish to the skillet, spooning the lemon butter caper mushroom sauce over the top. Serve the fish alongside the roasted asparagus, garnished with fresh parsley.
