Preparation Steps
Prepare the Mojo Marinade
In a bowl, combine garlic cloves (minced), orange juice, lime juice, oregano, cumin, salt, and black pepper. Mix well.
Cook the Rice
While the pork is roasting, rinse the white rice under cold water until the water runs clear. In a pot, combine 4 cups of water with the rinsed rice. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is cooked and water is absorbed.
Prepare the Yuca
Peel the yuca and cut it into chunks. Boil in salted water for about 20-25 minutes or until tender. Drain and set aside.
Heat the Black Beans
If using canned black beans, heat them in a saucepan over medium heat until warmed through. Season with a pinch of salt and pepper.
