Method

Preparation of steak

    Prepare the steak

    Thinly slice the top round steak against the grain into strips about 1/4 inch thick. Season with salt and black pepper.

    Cook the steak

    In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced steak and cook for about 2-3 minutes per side, or until browned and cooked to your desired level of doneness. Remove from skillet and set aside.

Sautéing onions

    Sauté the onions

    In the same skillet, add the remaining tablespoon of olive oil. Slice the onion into thin rings and add to the skillet. Sauté until the onions are translucent and slightly caramelized, about 5-7 minutes.

    Combine

    Return the cooked steak to the skillet with the onions. Squeeze the juice of the lime over the mixture and stir to combine. Cook for an additional 1-2 minutes to heat through.

Serving

    Prepare the sides

    Serve the palomilla with a side of cooked white rice and black beans.

    Plate the dish

    Place the steak and onion mixture on a plate alongside the white rice and black beans. Garnish with lime wedges if desired.
