Prepare the Rice

    Cook the Rice

    In a medium pot, bring 4 cups of water to a boil. Add 2 cups of white rice, a pinch of salt, and reduce the heat to low. Cover and let it simmer for 18-20 minutes until the rice is tender and the water is absorbed. Fluff with a fork and set aside.

Prepare the Plantains

    Fry the Plantains

    Peel the ripe plantains and slice them diagonally into 1-inch thick pieces. Heat vegetable oil in a frying pan over medium heat. Fry the plantain slices for about 2-3 minutes on each side until golden brown. Remove and drain on paper towels.

Prepare the Grouper

    Grill the Grouper

    Preheat a grill or a griddle pan over medium-high heat. Rub grouper filets with olive oil, salt, and black pepper. Grill the filets for about 4-5 minutes on each side until they are cooked through and have grill marks. Drizzle with lemon juice before serving.

Make Lemon Butter

    Prepare Lemon Butter

    In a small saucepan, melt the butter over low heat. Add lemon zest, minced garlic, and chopped parsley. Stir well and let it simmer for a couple of minutes until garlic is fragrant. Remove from heat.

Serve

    Plate the Dish

    On each plate, serve a portion of grilled grouper topped with lemon butter, a side of white rice, and fried sweet plantains.
