    Prepare the Plantains

    In a skillet, heat a little olive oil over medium heat. Fry the sliced sweet plantains until golden brown on both sides. Remove and set aside.

    Cook the Vegetables

    In the same skillet, add the remaining olive oil. Sauté the chopped onion and green bell pepper until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.

    Add the Shrimp

    Stir in the diced tomatoes, lime juice, salt, black pepper, and chili powder. Cook for 2-3 minutes until the tomatoes soften. Add the shrimp and cilantro, cooking until the shrimp turn pink and are cooked through, about 5 minutes.

    Serve

    Serve the enchilado de camarones over a bed of cooked white rice with the fried sweet plantains on the side.
