    Prepare the Chicken

    Preheat your oven to 375°F (190°C). Pat the chicken dry with paper towels. Rub the olive oil all over the chicken, then season generously with salt, black pepper, garlic powder, onion powder, and chopped rosemary.

    Roast the Vegetables

    In a large roasting pan, toss the sliced mushrooms and halved baby potatoes with a drizzle of olive oil, salt, and pepper. Spread them out evenly in the pan.

    Combine and Roast

    Place the seasoned chicken on top of the vegetables in the roasting pan. Pour the chicken broth into the bottom of the pan. Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

    Baste and Finish

    Baste the chicken with the pan juices halfway through cooking. If the vegetables start to brown too much, cover them loosely with aluminum foil.

    Rest and Serve

    Once cooked, remove the chicken from the oven and let it rest for about 10 minutes before carving. Serve the chicken with the roasted mushrooms and potatoes, drizzled with the roasting jus.
