Method

Marinating the Beef

    In a bowl, combine the soy sauce, cornstarch, Shaoxing wine, and ground black pepper. Mix well.

    Add the thinly sliced beef sirloin to the marinade and ensure all pieces are well-coated. Let it marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

Stir-Frying

    In a large wok or skillet, heat the vegetable oil over medium-high heat until hot.

    Add the dried red chilies and Sichuan peppercorns to the hot oil. Stir-fry for about 30 seconds until fragrant.

Adding Sauce
