1. Prep the Bread
Take two slices of sourdough bread and spread 1 tablespoon of butter evenly on one side of each slice.
2. Prepare the Cheese
Grate or slice the cheddar and mozzarella cheese and combine them in a bowl. You need about 1 cup of each.
Cooking
3. Assemble the Sandwich
Place one slice of bread, buttered side down, on a skillet or frying pan. Layer the cheese mixture on top, then place the second slice of bread on top, buttered side up.
4. Grill the Sandwich
Cook the sandwich over medium heat for about 3-4 minutes or until the bottom is golden brown. Carefully flip the sandwich and grill the other side for an additional 3-4 minutes until the cheese is melted and the bread is golden brown.
5. Serve
Once both sides are grilled to perfection, remove the sandwich from the skillet, let it cool for a minute, then slice in half and serve warm.
