Marinating the Chicken
1. Prepare the Chicken
Cut the chicken breast into bite-sized pieces. In a bowl, combine the chicken with soy sauce, cornstarch, Shaoxing wine, and salt. Mix well to coat the chicken evenly.

Cover the bowl with plastic wrap and let the chicken marinate in the refrigerator for at least 30 minutes.
Preparing the Stir-Fry Sauce

In a small bowl, whisk together the soy sauce, chili paste, sugar, sesame oil, and black vinegar until well combined. Set aside.

4. Heat the Oil
In a large skillet or wok, heat the oil over medium-high heat until shimmering.

Add the marinated chicken to the hot oil in a single layer. Cook for about 4-5 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
6. Stir-Fry Vegetables
In the same skillet, add the bell pepper, garlic, and ginger. Stir-fry for 2-3 minutes until the vegetables are just tender.
7. Combine Chicken and Sauce
Return the cooked chicken to the skillet with the vegetables. Add the stir-fry sauce and mix well to coat everything in the sauce. Cook for an additional 2-3 minutes until heated through.
8. Serve
