    Cook the Noodles

    Bring a large pot of salted water to a boil. Add the Lo Mein noodles and cook according to package instructions until al dente. Drain and set aside.

    While the noodles are cooking, slice the carrot and bell pepper into thin strips. Chop the broccoli into bite-sized florets. Rinse the snow peas and trim the ends. Slice the green onions thinly, separating the white and green parts. Mince the garlic and ginger.

    Mix the Sauce

    In a small bowl, mix together the soy sauce, sesame oil, cornstarch, water, and sugar until well combined. Set aside.

    Stir-fry the Vegetables

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant. Add the white parts of the green onions, carrots, bell pepper, broccoli, and snow peas. Stir-fry for 3-4 minutes until vegetables are tender-crisp.

    Add the cooked Lo Mein noodles to the skillet with the vegetables. Pour the prepared sauce over the noodles and toss everything together gently to combine. Stir-fry for an additional 2-3 minutes until heated through and the sauce thickens slightly.
