    Chop the green onions, dice the bell pepper, slice the mushrooms, grate the carrots, and rinse the bean sprouts. Place all vegetables in a large mixing bowl and set aside.

    In a separate bowl, crack the eggs and whisk them until well combined. Add soy sauce, sesame oil, salt, and black pepper. Mix until smooth.
