    Wash and chop the bell pepper, carrot, onion, mushrooms, and snap peas into bite-sized pieces. Cut the broccoli into small florets.

    Mince the garlic cloves and grate the ginger. Set aside.

    Sauté the Vegetables

    In a large skillet or wok, heat the sesame oil over medium-high heat. Add the chopped onion, and sauté for 2-3 minutes until it begins to soften.

    Stir in the minced garlic and grated ginger, cooking for an additional 1 minute until fragrant.

    Add the bell pepper, carrot, broccoli, snap peas, and mushrooms to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
