Marinade Preparation

Prepare the Marinade
In a medium bowl, whisk together soy sauce, brown sugar, rice vinegar, minced garlic, grated ginger, sesame oil, and cornstarch until smooth.

Cooking the Beef and Vegetables

Cook the Beef
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Remove the beef from the marinade (reserve the marinade) and add it to the skillet. Stir-fry for about 3-4 minutes or until browned.

Add Marinade
Pour the reserved marinade into the skillet. Bring to a simmer and cook for another 2-3 minutes, allowing the sauce to thicken.

Garnish
Stir in the chopped green onions just before serving.
Cooking the Rice

Prepare the Rice
In a medium saucepan, combine 2 cups of white rice and 4 cups of water. Bring to a boil over high heat.

Simmer
Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 18-20 minutes or until the rice is cooked and the water is absorbed.

Fluff the Rice
Remove from heat and let it sit for 5 minutes. Fluff the rice with a fork before serving.
