Preparation of Shrimp

    Season and Coat Shrimp

    In a bowl, season the peeled and deveined shrimp with salt and black pepper. Then coat each shrimp with cornstarch, ensuring even coverage.

    In a large skillet or wok, heat the vegetable oil over medium-high heat until it shimmers.

    Fry Shrimp

    Carefully add the coated shrimp to the hot oil, frying them in batches if necessary. Cook until they turn pink and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

Preparation of Sweet & Sour Sauce

    In a saucepan, combine brown sugar, white vinegar, ketchup, soy sauce, and pineapple juice. Stir well and bring to a simmer over medium heat.
