    Prepare the Pork

    Cut the pork tenderloin into bite-sized cubes and place them in a mixing bowl.

    Marinate the Pork

    Add soy sauce, cornstarch, minced garlic, and minced ginger to the pork. Mix well to coat all the pieces. Cover and let it marinate for at least 30 minutes, preferably in the refrigerator.

Sweet & Sour Sauce

    Make the Sauce

    In a bowl, combine ketchup, rice vinegar, brown sugar, and soy sauce. Mix until the sugar is dissolved and the sauce is well combined.

    Prepare Vegetables

    Dice the bell pepper and onion, and set aside along with pineapple chunks.

Cooking

    Cook the Pork

    In a large skillet or wok, heat vegetable oil over medium-high heat. Add the marinated pork and stir-fry until browned and cooked through, about 5-7 minutes.

    Add Vegetables

    Add the diced bell pepper, onion, and pineapple chunks to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender.

    Combine with Sauce

    Pour the sweet and sour sauce over the pork and vegetable mixture. Stir well to coat everything in the sauce and bring to a simmer. Cook for an additional 2-3 minutes.
