Preparation

  1. 1

    Prepare the Vegetables

Wash and chop the bell pepper, carrot, and onion into thin strips. Rinse the snow peas and set aside. Mince the garlic and ginger.

  2. 2

    Prepare the Shrimp

If using raw shrimp, peel and devein them. Rinse under cold water and pat dry with paper towels.

Cooking

  1. 3

    Make the Sauce

In a small bowl, mix together the soy sauce, oyster sauce, cornstarch, and water until well combined. Set aside.

  2. 4

    Stir-Fry the Vegetables

In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.

  3. 5

    Add the Vegetables

Add the chopped bell peppers, carrots, and onion to the skillet. Stir-fry for 3-4 minutes until they begin to soften.

  4. 6

    Add the Snow Peas

Add the snow peas to the skillet and continue to stir-fry for another 2 minutes.

  5. 7

    Cook the Shrimp

Push the vegetables to the sides of the skillet. Add the shrimp to the center and cook for 2-3 minutes until they turn pink and opaque.

  6. 8

    Combine Everything

Pour the sauce over the shrimp and vegetables. Stir well to combine and cook for an additional 2-3 minutes until the sauce thickens.

  7. 9

    Season and Serve

Season with salt and black pepper to taste. Serve hot over rice or noodles.
