    Prepare the Pork

    In a skillet over medium-high heat, add a tablespoon of sesame oil. Once hot, add the seasoned pork and cook for about 5-7 minutes until browned and cooked through. Remove and set aside.

    Prep the Vegetables

    While the pork is cooking, dice the onion, mince the garlic, and chop the carrots and green onions. Set aside.

    Scramble the Eggs

    In the same skillet used for the pork, crack the eggs and scramble them until fully cooked. Remove and set aside.

    Stir-Fry the Vegetables

    In the same skillet, add a little more sesame oil if needed. Add the diced onion and minced garlic, cooking until fragrant, about 2 minutes. Then add the carrots and cook for another 3 minutes until slightly softened.

    Add the cooked pork back into the skillet along with the cooked jasmine rice and green peas. Stir well to combine the ingredients.

    Pour in the soy sauce and mix everything together, cooking for another 3-5 minutes until heated through. Make sure the rice is evenly coated in the sauce.

    Finish with Eggs and Green Onions

    Finally, fold in the scrambled eggs and chopped green onions. Stir to combine and allow to cook for another minute. Adjust seasoning with additional salt and pepper to taste.
