Slice the Beef
Cut the beef sirloin into thin strips, about 1/4 inch thick.

Prepare the Pineapple
If using fresh pineapple, cut it into bite-sized chunks. If using canned pineapple, drain the chunks.

Mix the Sauce
In a small bowl, combine soy sauce, honey, minced garlic, ginger, and cornstarch. Stir until well mixed and cornstarch is dissolved.
Cooking

Cook the Beef
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the beef strips and cook for about 3-4 minutes until browned. Remove from pan and set aside.

Sauté the Vegetables
In the same skillet, add another tablespoon of oil if needed. Add the sliced bell pepper, onion, and carrot. Stir-fry for about 3-5 minutes until they are slightly tender.

Combine Ingredients
Return the cooked beef to the skillet with the vegetables. Add the pineapple chunks and the prepared sauce. Stir to coat everything evenly.

Simmer
Reduce heat to medium and let it simmer for another 2-3 minutes until the sauce thickens slightly and everything is heated through.

Garnish the Dish
Chop the green onions and sprinkle them over the dish along with sesame seeds.

Serve the pineapple beef hot over rice or noodles if desired.
