Chicken Preparation

Prepare the Chicken
Cut the chicken breasts into bite-sized pieces. Season with salt and black pepper.

Coat the Chicken
Place the cornstarch in a bowl. Dredge each piece of chicken in cornstarch, shaking off any excess.
Cooking Chicken

Heat the Oil
In a large skillet or wok, heat the vegetable oil over medium-high heat.

Cook the Chicken
Add the coated chicken pieces in batches to the hot oil. Fry until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.

Make the Sauce
In a bowl, combine the fresh orange juice, soy sauce, rice vinegar, brown sugar, minced garlic, minced ginger, and red pepper flakes. Mix well.

Thicken the Sauce
In a small bowl, mix the cornstarch and water to form a slurry. Add to the orange sauce mixture and stir until well combined.
Final Assembly

Combine Chicken and Sauce
In the skillet used for frying, pour the sauce mixture and bring to a simmer over medium heat. Add the fried chicken and stir to coat the chicken in the sauce.

Cook for an additional 2-3 minutes, allowing the sauce to thicken. Serve hot over rice or with steamed vegetables.
