Prep the Pork
Slice the pork loin into thin strips about 1/4 inch thick. This will help it cook quickly and evenly.

Prepare the Vegetables
Shred the cabbage and carrots if not pre-shredded. Slice the green onions, separating the white parts from the green, and slice the mushrooms.

Cook the Pork
Heat a large skillet or wok over medium-high heat. Add a little oil and stir-fry the pork strips until they are browned and cooked through, about 5-7 minutes. Remove the pork from the pan and set aside.

In the same pan, add a bit more oil if necessary. Add the white parts of the green onions, shredded cabbage, carrots, and mushrooms. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.

In a small bowl, mix together the soy sauce, hoisin sauce, rice vinegar, sesame oil, and cornstarch until well combined.

Return the cooked pork to the skillet with the vegetables. Pour the sauce over the mixture and toss to coat everything evenly. Cook for an additional 2-3 minutes until the sauce thickens and everything is heated through.
