Prepare Chicken Filling

Cook the Chicken
In a medium saucepan, bring water to a boil. Add the chicken breasts and cook for 15-20 minutes until fully cooked. Remove from heat, let cool, and shred the chicken.

Sauté Vegetables
In a large skillet over medium heat, add sesame oil. Add minced garlic and ginger, sautéing for 1-2 minutes until fragrant. Add julienned carrots, shiitake mushrooms, and bean sprouts. Stir-fry for 5 minutes until vegetables are tender.

Combine Chicken and Sauce
Add the shredded chicken to the skillet with the sautéed vegetables. Stir in soy sauce, rice vinegar, and mix until well combined. Cook for an additional 2-3 minutes, then remove from heat.
Make Pancakes

Prepare Dough
In a large bowl, mix all-purpose flour and salt. Gradually add boiling water while stirring until a dough forms. Let it cool for a few minutes.

Knead and Roll
Knead the dough on a floured surface for about 5 minutes until smooth. Divide the dough into 8 equal pieces. Roll each piece into thin circles about 6 inches in diameter.

Cook Pancakes
Heat a non-stick skillet over medium heat. Cook each pancake for about 1 minute on each side until lightly browned. Keep warm while preparing the filling.

Mix Sauce Ingredients
In a small bowl, combine hoisin sauce, soy sauce, sugar, and water. Stir until the sugar is dissolved and the mixture is smooth.
Assemble Moo Shoo Chicken

Fill Pancakes
Place a few spoonfuls of the chicken and vegetable mixture in the center of each pancake. Drizzle with the prepared sauce.

Wrap and Serve
Fold the sides of the pancake over the filling and roll it up like a burrito. Serve warm with extra sauce on the side.
