Method

Preparation

  1. 1

    Prepare the Chicken

Thinly slice the boneless, skinless chicken breast into bite-sized pieces.

  2. 2

    Chop the Vegetables

Slice the mushrooms, carrots, and bell pepper. Trim the snow peas and chop the green onions.

Cooking

  1. 3

    Make the Sauce

In a bowl, whisk together the chicken broth, soy sauce, cornstarch, sesame oil, minced garlic, and minced ginger. Set aside.

  2. 4

    Stir-Fry the Chicken

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and stir-fry for about 5-7 minutes until cooked through. Remove the chicken from the skillet and set aside.

  3. 5

    Stir-Fry the Vegetables

In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced mushrooms, carrots, and bell pepper. Stir-fry for about 3-4 minutes until they start to soften.

  4. 6

    Combine Chicken and Vegetables

Add the cooked chicken back into the skillet with the vegetables. Stir in the snow peas and green onions.

  5. 7

    Add the Sauce

Pour the sauce over the chicken and vegetables. Stir well to combine and cook for an additional 2-3 minutes until the sauce thickens and everything is heated through.
