Method

Preparation

  1. 1

    Prepare the Sauce

In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, sesame oil, cornstarch, water, and red pepper flakes until smooth. Set aside.

  2. 2

    Prepare the Vegetables

Dice the bell pepper and zucchini into bite-sized pieces. Slice the green onions, keeping the white and green parts separated. Mince the garlic and ginger.

Cooking

  1. 3

    Cook the Shrimp

In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.

  2. 4

    Add Shrimp

Add the shrimp to the skillet and cook for 2-3 minutes, stirring occasionally, until they turn pink and opaque.

  3. 5

    Add Vegetables

Stir in the diced bell pepper, zucchini, and the white parts of the green onions. Cook for an additional 2-3 minutes until the vegetables are tender-crisp.

  4. 6

    Add Sauce

Pour the prepared sauce over the shrimp and vegetables in the skillet. Stir well to combine and cook for another 2-3 minutes until the sauce thickens and coats the shrimp and vegetables.

  5. 7

    Finish and Serve

Remove from heat and stir in the roasted peanuts and the green parts of the green onions. Serve hot over cooked rice or noodles.
