1. Prepare the Pork

Cut the pork tenderloin into bite-sized cubes and season with salt and black pepper. Set aside.

2. Chop the Vegetables

Dice the red and green bell peppers, and onion into small pieces. Mince the garlic cloves and chop the green onions, keeping the white and green parts separate.

3. Make the Sauce

In a bowl, mix together soy sauce, rice vinegar, cornstarch, sesame oil, sugar, and chili paste. Stir until well combined and set aside.

4. Cook the Pork

In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat. Add the seasoned pork and stir-fry until browned and cooked through, about 5-7 minutes. Remove the pork from the skillet and set aside.

5. Stir-Fry the Vegetables

In the same skillet, add a bit more oil if necessary and add the diced onion, red bell pepper, and green bell pepper. Stir-fry for about 3-4 minutes until they start to soften. Add the minced garlic and the white parts of the green onions, and cook for another 1-2 minutes.

6. Combine Everything

Return the cooked pork to the skillet with the vegetables. Pour the prepared sauce over the mixture and stir well to combine. Cook for an additional 2-3 minutes until the sauce has thickened and everything is heated through.

7. Add Peanuts and Serve

Finally, stir in the dry roasted peanuts and the green parts of the green onions. Serve hot over rice or noodles.
