Prepare the Chicken
Cube the chicken breast into bite-sized pieces and season with salt and black pepper. Set aside.

Chop the Vegetables
Dice the bell pepper and zucchini, and slice the green onions. Set aside.

Make the Sauce
In a bowl, mix together soy sauce, rice vinegar, sugar, cornstarch, sesame oil, and chicken broth until well combined.

Stir-Fry the Chicken
In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat. Add the seasoned chicken and stir-fry for about 5-7 minutes until cooked through. Remove from pan and set aside.

In the same skillet, add a little more oil if needed. Stir in the dried red chilies, followed by the bell pepper and zucchini. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

Return the cooked chicken to the skillet. Pour in the sauce mixture and stir well to combine. Cook for an additional 2-3 minutes until the sauce thickens and coats the chicken and vegetables.

Stir in the roasted peanuts and sliced green onions. Cook for another minute and then remove from heat.
