Cook the Rice
Rinse the white rice under cold water until the water runs clear. In a pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and water is absorbed. Remove from heat and let it sit covered for an additional 10 minutes.
Cooking Noodles and Vegetables

Prepare the Noodles
Soak the sweet potato clear noodles in warm water for about 20-30 minutes until they soften. Drain and set aside.

Stir-fry Vegetables
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the sliced onions, julienned carrots, bell pepper, and zucchini. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.

Cook the Beef
Push the vegetables to the side of the skillet and add the marinated beef. Stir-fry for 3-4 minutes until the beef is cooked through. Combine with the vegetables.

Add Noodles
Add the soaked sweet potato noodles to the skillet. Toss everything together and stir-fry for an additional 2-3 minutes until the noodles are heated through and well combined with the beef and vegetables.
Serving

Plate the Dish
Serve the Jab Chae over a bed of steamed white rice. Garnish with sesame seeds and chopped green onions.
