    Wash and slice all vegetables: bell peppers, carrots, onion, celery, and mushrooms. Julienne the carrots and slice the onion and celery thinly. Clean the bean sprouts by rinsing them under cold water.

    Slice the chicken breast into thin strips, peel and devein the shrimp, and cube the tofu into bite-sized pieces.

    In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the chicken breast and cook until no longer pink, about 5-7 minutes. Remove from the skillet and set aside.

    In the same skillet, add the shrimp and cook until they turn pink, about 3-4 minutes. Add the cubed tofu and cook for another 2-3 minutes until golden. Remove both from the skillet and set aside.

    Add the remaining sesame oil to the skillet. Add the onions, bell peppers, carrots, celery, and mushrooms. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.

    In a small bowl, mix soy sauce, oyster sauce, cornstarch, and water until well combined. Pour this mixture over the vegetables in the skillet.

    Add the cooked chicken, shrimp, and tofu back into the skillet. Stir everything together and cook for an additional 3-4 minutes until the sauce thickens and coats the ingredients.

    Season with black pepper to taste. Stir in the bean sprouts and cook for another minute to heat through.
