Prep

    Prepare the Protein

    Cut the chicken breast and pork tenderloin into bite-sized pieces. Season with salt and black pepper. Set aside.

    Prepare the Shrimp

    Make sure the shrimp are cleaned, peeled, and deveined. Set aside.

    Prepare the Vegetables

    Slice the bell peppers and onion into thin strips. Set aside. If using fresh pineapple, chop it into chunks.

Cooking

    Cook the Chicken and Pork

    In a large skillet or wok, heat sesame oil over medium-high heat. Add the chicken and pork pieces, and stir-fry for about 5-7 minutes until cooked through. Remove from the skillet and set aside.

    Cook the Shrimp

    In the same skillet, add the shrimp and cook for about 3-4 minutes until they turn pink and opaque. Remove and set aside with the chicken and pork.

    Sauté the Vegetables

    In the same skillet, add the sliced bell peppers, onion, garlic, and ginger. Sauté for about 3-4 minutes until the vegetables are tender-crisp.

    Make the Sweet and Sour Sauce

    In a bowl, whisk together soy sauce, brown sugar, rice vinegar, ketchup, cornstarch, and water until smooth. Pour this mixture into the skillet with the vegetables. Bring to a simmer and stir until the sauce thickens.

    Combine All Ingredients

    Return the chicken, pork, and shrimp to the skillet. Add the pineapple chunks and toss everything together until well coated with the sauce. Cook for an additional 2-3 minutes.

Serve

    Garnish and Serve

    Remove from heat, and garnish with sliced green onions and toasted sesame seeds. Serve hot with rice or noodles.
