In a bowl, combine cornstarch, all-purpose flour, salt, and black pepper. In another bowl, beat the egg.

Dip each piece of chicken first into the egg, then coat it with the flour mixture. Ensure even coverage.

Carefully add the coated chicken pieces in batches, frying until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.

In a bowl, mix together soy sauce, rice vinegar, sugar, minced ginger, minced garlic, and chicken broth.

In a small bowl, mix cornstarch with water to create a slurry. Slowly add the slurry into the simmering sauce, stirring continuously until it thickens.
