Prepare Noodles

    Cook Lo Mein Noodles

    Bring a large pot of water to a boil. Add the Lo Mein noodles and cook according to package instructions until al dente. Drain and set aside.

Prepare Chicken and Vegetables

    Slice Chicken and Vegetables

    While the noodles are cooking, slice the chicken breast into thin strips. Prepare the vegetables by slicing the bell pepper, julienning the carrot, and trimming the snow peas. Slice the green onions, separating the white parts from the green.

    Cook Chicken

    In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken and cook for about 5-7 minutes, or until cooked through. Remove from the pan and set aside.

    Stir-Fry Vegetables

    In the same pan, add the remaining tablespoon of vegetable oil. Add the white parts of the green onions, bell pepper, carrot, and snow peas. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.

Make Sauce

    Combine Sauce Ingredients

    In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, cornstarch, water, and black pepper until smooth. Set aside.

Combine and Serve

    Combine Ingredients

    Add the cooked chicken back to the pan with the vegetables. Pour the sauce over the chicken and vegetables, stirring well to combine. Add the cooked Lo Mein noodles and toss everything together until well coated and heated through.

    Garnish and Serve

    Remove from heat, garnish with the green parts of the sliced green onions, and serve hot.
