    Chop the celery and slice the carrots into bite-sized pieces. If using frozen corn, ensure it is thawed.

    Rinse the whole chicken under cold water and pat dry with paper towels. Season the chicken inside and out with salt and black pepper.

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 3-5 minutes.
